Dear Pulled Whole Hog BBQ Eggs Benedict at Smoke,

You are perfect. You are great. And, really, you're two great things rolled into one amazing dish.

No, you are neither a pulled pork BBQ sandwich nor quite eggs benedict. You are both.

And, man, are you beautiful.

The only thing better than the way you look, really, is the way you taste. Your poached eggs? They are perfectly poached. And your hollandaise sauce? Oh my lord. It's tangy and great — and especially delicious when layered under your smoky BBQ sauce, which is mysterious and rich.

And that's only the beginning.

The heartiness and warmth of the pulled hog you hold reminds me of your humble roots and how far you have gone in your life. And the stability of your English muffin, with sauce leaking into its crumbly pores, proves to me that you are ready for a steady relationship. And, from where I'm standing, that's pretty hot (and not just because you're served that way.)

You're thoughtful, too. Even when you leave me, gone from my plate, you still leave a little sauce and yolk behind for me to sop up with some Goat Cheese Potato Cakes.

You sure know how to take care of a man.

Perhaps the biggest reason I love you so much, BBQ Eggs Benedict, is because you're the one that has finally made me settle down and pick a favorite eggs benedict in Dallas. Before I met you, I jumped from brunch to brunch, from restaurant to restaurant.

None of those other eggs benedicts mean much to me now. Most of them were unoriginal and boring, now that I think back on them. They pretty much all left me with a lust for more.

I remember when you and I originally met. What an affair that was. Our initial tryst was a rather messy one, I admit. But that's mostly because of all of that hollandaise and BBQ sauce and the fact that, at the time, I wasn't quite sure how to handle all of it. Immediately after that initial meet, I knew I never needed anyone else.

I immediately went home and told my mother about you.

Ever since, I've been only been spending my brunches with you. And my eyes stay locked on you when we're together. Even when you're not around, I promise you: Never has my gaze wandered to another's runny yolk.

And, though you're not the cheapest date, your somewhat hefty cost of $13 is nothing compared to the love I feel for you. I would gladly pay $100 to feel you upon my lips again. When you're in my world, money has no worth.
